Of eight health inspections in Broome County last month, one had critical violations, three had no violations and six had uncorrected violations left over from previous inspections, according to new reports released by the Broome County Health Department.
According to health.ny.gov, there are more than 90,000 food establishments in New York State. Inspections cover all public or private establishments that serve food on site, including schools, nursing homes, etc.

What are critical and non-critical violations?
According to a spokesperson for the New York State Department of Health, red “critical” violations include “food source and condition, food preparation and storage temperature, food handler sanitation practices, water and wastewater, food contamination by pests, and use of toxic substances.”
Critical violations must be corrected during inspection because they contain factors that can cause foodborne illness.
In New York State, restaurants are not subject to inspections if they have been approved or failed.
Non-critical, or blue, violations do not involve factors that can directly cause foodborne illness, but can have a negative impact on restaurant operations. Violations of this nature relate to the maintenance, design and cleanliness of the establishment.
Non-critical violations are not as urgent as critical violations and must be determined within the time frame specified by the health inspector.
How often are health screenings in Broome County?
The frequency of food establishment inspections in New York State depends on the establishment’s risk category and the establishment’s health code compliance history.
High-risk catering establishments are inspected twice a year, medium – once a year, low – every two years.
Examples of high-risk food establishments include table-service restaurants, cafeterias, and school kitchens where food is prepared—businesses that involve complex food processes such as pre-cooking or heating and cooling food.
Medium-risk food establishments do not require such complex processes because they serve low-maintenance foods such as pizza, hamburgers, sandwiches.
Bars and coffee shops are typical low-risk food establishments due to the minimal preparation required to serve them.
Inspectors from each county’s health department are trained by the New York State Department of Health to standardize health inspections of food establishments throughout the state.
