What are critical and non -critical violations?
Red “critical” lesions include “food source and condition, cooking and storage temperature, food workers’ sanitary practice, water and sewage, food contamination with pests and the use of toxic substances,” says a representative of the New York State Health Department.
Critical irregularities must be corrected during inspection as they include factors that can cause food disease.
In New York State, restaurant checks are not carried out or unsuccessful.
Non -critical or blue lesions are not related to factors that can directly cause disease food, but they can adversely affect the restaurant’s performance. These types of violations are related to the supervision, design and cleanliness of the institution.
Non -critical violations are not as urgent as critical and must be determined in the light of the time specified by the Health Inspector.
How often do health checks are carried out in Broome County?
The frequency of food -finding checks in New York state depends on the company’s risk category and the stories of the Code of Health of the Institution.
High -risk food facilities are checked twice a year, average risk once a year and low risk every other year.
Examples of high-risk food institutions are restaurant table services, eaters and school kitchens that prepare food-these are institutions with complex food processes, such as preparing food pre-or warming and cooling and cooling.
Medium -risk food institutions do not need such complex processes because they serve low -care foods such as pizza, burger, sandwiches.
Bars and cafes are typical low -risk food services companies due to the minimum preparation needed for their food services.
Inspectors of each county departments are trained in the New York State Department of Health to standardize a food facility throughout the state. Information on the Department of Health of each county can be found on Health.ny.gov/envirvirvirvinvental/water/dring/ctyadd1.htm.
